The Delis family from Aetolofos, Agia, east of Larissa, produces—alongside their fruit cultivation—a type of organic apple cider vinegar with identity and history. Alongside the production of 9 different apple varieties, which account for 80% of their total harvest, in addition to pears, cherries, chestnuts, and walnuts, the production of unfiltered organic apple cider vinegar using the traditional Orleans method began in 2017. As Maria Delis explains to me, this is an unfiltered type of vinegar resulting from the natural fermentation of cider—a process that helps preserve the valuable beneficial enzymes, trace elements, pectin, vitamins, and minerals it contains, making it a product of high nutritional value.
